Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 1 cup pineapple juice
  • 1/4 cup dark rum
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • Salt and pepper to taste

Instructions

  1. 1. In a bowl, combine the coconut milk, pineapple juice, rum, minced garlic, ground ginger, ground allspice, salt, and pepper. Mix well.
  2. 2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag, then toss gently to coat the chicken. Marinate in the refrigerator for at least 2 hours or overnight for best results.
  3. 3. Preheat the grill to medium-high heat.
  4. 4. Remove the chicken from the marinade and discard the excess marinade.
  5. 5. Grill the chicken breasts for 6-8 minutes per side, or until they are cooked through and have beautiful grill marks.
  6. 6. While the chicken is grilling, prepare the mango salsa. In a bowl, combine the diced mangoes, red onion, jalapeno pepper, red bell pepper, lime juice, cilantro, and salt. Mix well.
  7. 7. Once the chicken is done, remove it from the grill and let it rest for a few minutes.
  8. 8. Serve the grilled Tropical Island Chicken with the zesty mango salsa on top.

Cooking Notes

  • You can also pan-sear the chicken if you don't have a grill, just make sure to cook it all the way through.
  • For a richer flavor, you can baste the chicken with the leftover marinade while grilling.
