Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup butter, melted
  • 1 can (15 ounces) pumpkin puree
  • 1 can (14 ounces) sweetened condensed milk
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • Food coloring (assorted colors for the trippy swirl)

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9x9 inch baking dish.
  3. 3. In another bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, cinnamon, nutmeg, ginger, and salt until smooth.
  4. 4. Pour the pumpkin mixture over the crust, spreading it evenly.
  5. 5. Use small bowls to separate the mixture into different portions. Add a few drops of each food coloring to each portion, creating a trippy swirl effect.
  6. 6. Use a toothpick to gently swirl the colors into the pumpkin mixture.
  7. 7. Bake for 40-45 minutes or until the center is set.
  8. 8. Allow to cool completely before cutting into bars.

Cooking Notes

  • For a more intense color in the swirl, use gel food coloring.
  • Experiment with different color combinations to achieve a truly trippy effect.

Beer, Wine, Cocktail Pairings

  • Beer Pairing: A pumpkin ale or a spiced winter ale would complement the flavors of the pumpkin dream bars.
  • Wine Pairing: A late-harvest Riesling or a creamy chardonnay would be a delightful pairing with the rich pumpkin and spice flavors.
  • Cocktail Pairing: A pumpkin spice martini garnished with a cinnamon stick or a bourbon-based cocktail with hints of caramel and vanilla would elevate the festive atmosphere.
