Ingredients

  • 8 oz pasta of your choice
  • 2 cups tomato juice
  • 4 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 tsp red pepper flakes
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. 1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions. Once cooked, drain and set aside.
  2. 2. In a separate skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for a minute until fragrant.
  3. 3. Pour in the tomato juice and let it simmer for about 15-20 minutes, until the sauce has reduced and thickened slightly.
  4. 4. Add the cooked pasta to the skillet and toss it in the tomato sauce until well coated. Season with salt and pepper to taste.
  5. 5. Sprinkle grated Parmesan cheese over the pasta and mix until the cheese is melted and the pasta is fully coated in the sauce.
  6. 6. Serve the Tomato Tango Pasta in individual plates or bowls, garnished with fresh basil leaves.

Cooking Notes

  • Feel free to add some grilled vegetables or roasted cherry tomatoes for extra flavor and texture.
  • For a creamier version, you can finish the dish with a splash of heavy cream right before serving.

Beer, Wine, Cocktail Pairings

  • Beer Pairing: A light and hoppy pale ale would complement the tangy flavors of the Tomato Tango Pasta.
  • Wine Pairing: A fruity and medium-bodied Chianti or Sangiovese would enhance the richness of the tomato sauce while balancing its acidity.
  • Cocktail Pairing: A classic Aperol Spritz with its refreshing bitterness would contrast beautifully with the pasta's richness, and its citrus notes would complement the tomato flavors.
