Ingredients

  • 1 block firm tofu, drained and cubed
  • 1 cup plain Greek yogurt
  • 2 tablespoons tandoori masala spice mix
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon minced garlic
  • Salt to taste
  • 8 small tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • Cilantro for garnish
  • Lime wedges for serving

Instructions

  1. 1. In a bowl, mix the Greek yogurt, tandoori masala, lemon juice, cumin, paprika, garlic, and salt to make the marinade.
  2. 2. Add the cubed tofu to the marinade and coat well. Allow to marinate for at least 30 minutes.
  3. 3. Preheat a non-stick pan or grill over medium-high heat. Add the marinated tofu cubes and cook until lightly charred and crispy on the outside, about 10 minutes.
  4. 4. Warm the tortillas in a dry pan or oven for a few seconds on each side.
  5. 5. Fill each tortilla with the tandoori tofu, shredded lettuce, diced tomatoes, and red onions. Garnish with cilantro and serve with lime wedges.
