Ingredients

  • 6 large eggs
  • 4 slices of bacon, chopped
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/4 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Chopped chives, for garnish (optional)

Instructions

  1. 1. In a large skillet, cook the chopped bacon over medium heat until it's crispy. Remove the bacon from the skillet and set it aside, leaving the drippings in the pan.
  2. 2. Add the diced bell peppers and red onion to the skillet and sauté for a few minutes until they are tender.
  3. 3. In a bowl, beat the eggs and season with salt and pepper. Pour the eggs into the skillet with the sautéed vegetables.
  4. 4. Cook the eggs, stirring occasionally, until they are just set. Add the cooked bacon and shredded cheddar cheese to the eggs and gently fold them in until the cheese is melted.
  5. 5. Garnish with chopped chives if desired, and serve hot.
