Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp paprika
Salt and black pepper to taste
1 cup cooked rice
1 cup black beans, drained and rinsed
1 cup shredded cheddar cheese
4 large flour tortillas
Salsa, sour cream, and guacamole for serving
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is softened.
3. Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for another 2 minutes.
4. Remove the skillet from the heat and stir in the cooked rice and black beans.
5. Place a tortilla on a clean surface. Spoon a portion of the beef mixture onto the center of the tortilla and top with shredded cheese.
6. Roll up the tortilla, folding in the sides as you go, to form a burrito. Place the burrito, seam side down, on a baking sheet. Repeat with the remaining tortillas and filling.
7. Lightly spray or brush the burritos with oil and bake for 15-20 minutes, or until golden and crispy.
8. Serve the burrito bombs with salsa, sour cream, and guacamole.
