Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 slices of thick-cut bacon
  • 1 cup of baby spinach
  • 1/2 cup of cream cheese
  • 1/4 cup of grated cheddar cheese
  • 2 cloves of garlic, minced
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • Toothpicks

Instructions

  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. In a bowl, combine the baby spinach, cream cheese, cheddar cheese, minced garlic, smoked paprika, and salt and pepper. Mix well to create the filling.
  3. 3. Place the chicken breasts on a clean surface and carefully slice a slit into the side of each breast, creating a pocket.
  4. 4. Stuff each chicken breast with the filling mixture, then wrap each breast with 2 slices of bacon, securing with toothpicks.
  5. 5. Heat a skillet over medium-high heat and sear the bacon-wrapped chicken for 2-3 minutes on each side, until the bacon is crispy.
  6. 6. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
