Ingredients

  • 4 umami chicken thighs
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 1/2 tsp grated ginger
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/4 cup chicken broth
  • 1 tbsp cornstarch
  • 2 green onions, chopped (for garnish)

Instructions

  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. In a small bowl, mix together the soy sauce, honey, sesame oil, grated ginger, minced garlic, and red pepper flakes to create a marinade.
  3. 3. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken, ensuring they are well coated. Marinate the chicken in the refrigerator for 30 minutes.
  4. 4. After marinating, transfer the chicken and the marinade into a baking dish. Add the chicken broth to the dish.
  5. 5. Cover the baking dish with foil and bake for 25 minutes. Then remove the foil and continue baking for an additional 15 minutes, or until the chicken is cooked through and the skin is crispy.
  6. 6. While the chicken is roasting, in a small bowl, mix the cornstarch with 1 tablespoon of cold water to create a slurry.
  7. 7. Once the chicken is done, transfer it to a serving plate. Remove the excess fat from the baking dish and place it on the stovetop over medium heat. Add the cornstarch slurry to the dish and cook, stirring constantly, until the sauce thickens.
  8. 8. Pour the thickened sauce over the chicken and garnish with chopped green onions.
  9. 9. Serve the savory umami chicken delight with steamed rice and your favorite vegetables.
