Instructions

  1. 1. Rinse the Basmati rice under cold water until the water runs clear. Drain and set aside.
  2. 2. In a large, heavy-bottomed saucepan, bring the milk to a gentle boil over medium heat. Add the rinsed rice and reduce the heat to low. Simmer, stirring occasionally, until the rice is tender and the mixture takes on a creamy consistency, about 30-35 minutes.
  3. 3. Meanwhile, dissolve the saffron threads in a small amount of boiling water and add it to the cooking rice.
  4. 4. Add the sugar and continue to simmer for an additional 5-10 minutes, until the pudding thickens.
