Ingredients

  • 2 cups canned chickpeas, rinsed and drained
  • 2 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 preserved lemon, finely chopped
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked couscous or rice for serving

Instructions

  1. 1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until they turn translucent, about 5 minutes.
  2. 2. Add the minced garlic, ground cumin, ground coriander, paprika, ground turmeric, ground cinnamon, and cayenne pepper to the pot. Cook, stirring constantly, for 1-2 minutes until the spices become fragrant.
  3. 3. Add the canned chickpeas, vegetable broth, tomato paste, and preserved lemon to the pot. Stir well to combine all the ingredients.
  4. 4. Bring the stew to a gentle simmer, then cover the pot and let it cook for 45 minutes, stirring occasionally.
  5. 5. Add the diced tomatoes to the stew and continue to cook, uncovered, for an additional 10-15 minutes until the stew thickens slightly. Season with salt and pepper to taste.
  6. 6. Serve the Moroccan Chickpea Stew over cooked couscous or rice, garnished with fresh cilantro.
