Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1/2 cup kalamata olives, chopped
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. In a mixing bowl, combine the sun-dried tomatoes, spinach, olives, pine nuts, garlic, basil, oregano, and olive oil. Mix well to create the stuffing mixture.
  3. 3. Using a sharp knife, make a horizontal slit along the thick, long edge of each chicken breast to create a pocket for the stuffing.
  4. 4. Season the outside of the chicken with salt and pepper, then stuff each breast with the Mediterranean mixture, pressing to seal.
  5. 5. Heat an oven-safe skillet over medium-high heat. Add a little olive oil and sear the chicken on both sides until golden brown, about 3-4 minutes per side.
  6. 6. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through.
  7. 7. Once done, remove from the oven and let the chicken rest for a few minutes before serving.

Cooking Notes

  • Make sure not to overstuff the chicken breasts to prevent the filling from spilling out during cooking.
  • If pine nuts are not available, walnuts or almonds can be used as substitutes for added crunch.
