Ingredients

  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • Fresh basil leaves, for garnish

Instructions

  1. 1. Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions. Once they float to the top, they are cooked. Drain and set aside.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. 3. Pour in the diced tomatoes, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir to combine and simmer for 5-7 minutes to allow the flavors to meld.
  4. 4. Add the cooked gnocchi to the skillet and toss to coat them in the sauce. Cook for an additional 2-3 minutes.
  5. 5. Remove the skillet from the heat and gently fold in the Kalamata olives.
  6. 6. To serve, divide the gnocchi among plates, sprinkle with crumbled feta cheese, and garnish with fresh basil leaves.
