Ingredients

  • 4 eggs
  • 1 small onion, finely chopped
  • 1 small tomato, chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 parathas (store-bought or homemade)
  • 2 tablespoons vegetable oil
  • Fresh coriander leaves for garnish
  • Spicy green chutney for serving

Instructions

  1. 1. In a bowl, beat the eggs until frothy. Add the chopped onion, tomato, green chilies, turmeric, garam masala, and salt. Mix well.
  2. 2. Heat 1 tablespoon of oil in a non-stick pan over medium heat. Pour half of the egg mixture into the pan and spread it out evenly to make an omelette. Let it cook for 2-3 minutes until the bottom is set.
  3. 3. Gently flip the omelette and cook for another 2-3 minutes until fully cooked and slightly golden. Repeat with the remaining egg mixture.
  4. 4. Warm the parathas in a separate pan or microwave according to the package instructions.
  5. 5. Place an omelette on each warm paratha. Roll the parathas tightly around the omelette.
  6. 6. Cut the rolls in half and place them on serving plates. Garnish with fresh coriander leaves and serve with spicy green chutney.

  • You can customize the spiciness of the omelette by adjusting the amount of green chilies.
  • You can also add other fillings like cheese, cooked potatoes, or bell peppers to the omelette for variation.
