Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 3 lemongrass stalks, white parts only, finely chopped
  • 3 garlic cloves, minced
  • 2 shallots, finely chopped
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp honey
  • 1 tsp chili flakes
  • Wooden skewers, soaked in water
  • Rice vermicelli noodles
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 cup bean sprouts
  • Fresh herbs (Thai basil, cilantro, mint)
  • Crushed peanuts
  • Lime wedges
  • Nuoc Cham (Vietnamese dipping sauce)

Instructions

  1. 1. In a bowl, combine the lemongrass, garlic, shallots, fish sauce, soy sauce, honey, and chili flakes. Add the sliced beef, mix well, and marinate for at least 30 minutes.
  2. 2. Thread the marinated beef slices onto the soaked skewers.
  3. 3. Preheat the grill or grill pan over medium-high heat. Grill the beef skewers for 2-3 minutes on each side until charred and cooked to your liking.
  4. 4. Meanwhile, cook the rice vermicelli noodles according to the package instructions, then drain and rinse under cold water.
  5. 5. Assemble the noodle salad by placing the cooked noodles, julienned cucumber, carrot, bean sprouts, and fresh herbs in a large bowl. Toss with nuoc cham dressing.
  6. 6. Serve the grilled lemongrass beef skewers alongside the Vietnamese noodle salad, garnished with crushed peanuts and lime wedges.

Cooking Notes

  • If using wooden skewers, make sure to soak them in water for at least 30 minutes before grilling to prevent burning.
