Ingredients

  • 4 chicken breasts
  • 1/4 cup Caribbean jerk seasoning
  • 1 tbsp olive oil
  • 2 cups fresh pineapple, diced
  • 1/2 red onion, finely diced
  • 1 jalapeno, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Rub the chicken breasts with Caribbean jerk seasoning and drizzle with olive oil. Let it marinate for 15 minutes.
  3. 3. In a bowl, combine the diced pineapple, red onion, jalapeno, cilantro, lime juice, salt, and pepper to make the salsa. Mix well and set aside.
  4. 4. Place the marinated chicken on the grill and cook for 6-7 minutes on each side, or until fully cooked.
  5. 5. While the chicken is cooking, place the diced pineapple directly on the grill and char for 3-4 minutes per side.
  6. 6. Once the chicken is cooked, remove from the grill and let it rest for a few minutes before serving with a generous spoonful of the grilled pineapple salsa on top.

Cooking Notes

  • For an extra kick of heat, add a pinch of cayenne pepper to the jerk seasoning.
  • You can also use boneless chicken thighs for this recipe if preferred.
