2 tbsp soy sauce
1 tbsp Dijon mustard
1/4 tsp ground black pepper
1/4 cup maple syrup
3 tbsp bourbon

Instructions
1. Preheat the oven to 300°F (150°C).
2. In a bowl, mix the honey, soy sauce, Dijon mustard, and black pepper. Place the pork belly in a roasting pan and brush it generously with the honey mixture. Season with salt.
3. Cover the roasting pan with foil and roast in the preheated oven for 2.5 hours, until the pork belly is tender and caramelized.
