1 lb beef chuck, thinly sliced
6 cups beef broth
2 cups water
4 slices ginger
2 cloves garlic, smashed
2 star anise
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce
2 tsp sugar
8 oz fresh noodles (such as wonton noodles or egg noodles)
4 bok choy, halved
Sliced green onions, for garnish
Fresh cilantro, for garnish
Instructions
1. In a large pot, combine the beef broth, water, ginger, garlic, star anise, soy sauce, oyster sauce, dark soy sauce, and sugar. Bring it to a boil over high heat.
2. Add the sliced beef to the boiling broth and reduce the heat to a simmer. Let it cook for 1.5-2 hours until the beef is tender.
3. While the beef is cooking, blanch the bok choy in a separate pot of boiling water for 2-3 minutes. Transfer the bok choy to a bowl of ice water to stop the cooking process. Drain and set aside.
4. Cook the fresh noodles according to the package instructions, then divide them among serving bowls. Top with the blanched bok choy.
5. Once the beef is tender, remove the ginger, garlic, and star anise from the broth. Ladle the beef and broth over the noodles and bok choy. Garnish with green onions and cilantro. Serve hot.
