Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and black pepper to taste
  • Greek salad ingredients (tomatoes, cucumber, red onion, Kalamata olives, feta cheese)
  • 1 cup cooked orzo
  • Zest of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. 1. In a bowl, mix Greek yogurt, minced garlic, olive oil, lemon juice, oregano, thyme, rosemary, salt, and black pepper.
  2. 2. Place the chicken breasts in a resealable bag and add the yogurt marinade. Ensure the chicken is fully coated, then refrigerate for at least 30 minutes, or up to 4 hours.
  3. 3. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked through.
  4. 4. In a serving bowl, combine the Greek salad ingredients and toss gently. Set aside.
