Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup pure maple syrup
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon sesame seeds, for garnish
  • 4-5 wooden or metal skewers, soaked if wooden

Instructions

  1. 1. In a bowl, whisk together the maple syrup, sriracha sauce, soy sauce, rice vinegar, red pepper flakes, garlic powder, and black pepper.
  2. 2. Place the chicken pieces in a resealable plastic bag and pour in the marinade. Seal the bag and marinate in the refrigerator for at least 2 hours, or overnight for a more intense flavor.
  3. 3. Preheat the grill to medium-high heat.
  4. 4. Thread the marinated chicken pieces onto the skewers, dividing them evenly.
  5. 5. Place the skewers on the grill and cook for about 6-8 minutes, turning occasionally, until the chicken is fully cooked and has a charred exterior.
  6. 6. Brush the skewers with extra maple glaze during the last few minutes of cooking.
  7. 7. Once done, remove from the grill and sprinkle with sesame seeds for garnish.
  8. 8. Serve hot and enjoy the fiery, sweet, and savory flavors!

Cooking Notes

  • Feel free to adjust the amount of sriracha to control the level of heat according to your preference.
  • If using wooden skewers, remember to soak them in water for at least 30 minutes before using to prevent burning.

Beer, Wine, Cocktail Pairings

  • Beer Pairing: A crisp and hoppy IPA would complement the spicy kick of the skewers.
  • Wine Pairing: A semi-sweet Riesling with a slight touch of acidity would balance the heat and sweetness of the dish.
  • Cocktail Pairing: A spicy margarita with muddled jalapenos and a touch of maple syrup would make for a perfect pairing to enhance the spicy flavors of the skewers.
