Ingredients

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon cream of tartar
  • 1 cup unsalted butter, at room temperature
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • Assorted fruity jams (strawberry, raspberry, apricot, etc.)
  • Powdered sugar, for dusting

Instructions

  1. 1. Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. 2. In a medium bowl, whisk the flour, baking soda, and cream of tartar together. Set aside.
  3. 3. In a large bowl, cream the butter and sugar together until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
  4. 4. Gradually add the dry ingredients into the wet ingredients, mixing until a dough forms.
  5. 5. Scoop out tablespoon-sized pieces of dough, and form them into balls. Use your thumb to press an indentation into each ball to create a well for the filling.
  6. 6. Fill each well with a small amount of the assorted fruity jams.
  7. 7. Bake the cookies for 8-10 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
