Ingredients

  • 1 small butternut squash, peeled, seeded, and cut into 1-inch cubes
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • Cooking spray

Instructions

  1. 1. Preheat the air fryer to 400°F (200°C).
  2. 2. In a shallow dish, mix together the panko breadcrumbs, Parmesan cheese, smoked paprika, garlic powder, salt, and pepper.
  3. 3. Dip each butternut squash cube into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere the coating.
  4. 4. Lightly coat the air fryer basket with cooking spray. Arrange the coated butternut squash cubes in a single layer in the basket.
  5. 5. Air fry the butternut bites for 10-12 minutes, then turn them over and continue to air fry for an additional 8-10 minutes, until they are golden and crispy.
