Ingredients

  • 4 salmon fillets
  • 1/4 cup honey
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1. In a small bowl, whisk together the honey, orange zest and juice, lemon zest and juice, and olive oil. Season with salt and pepper.
  2. 2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for 15 minutes.
  3. 3. Preheat a grill or grill pan over medium-high heat. Remove the salmon from the marinade and pat dry with paper towels.
  4. 4. Place the salmon skin-side down on the grill and cook for 6-8 minutes, carefully flipping halfway through.
  5. 5. During the last minute of cooking, brush the salmon fillets with any remaining marinade to create a glaze.
  6. 6. Once the salmon is cooked to your desired doneness, remove from the grill and garnish with fresh parsley.

Cooking Notes

  • For a caramelized finish, you can broil the salmon for a minute after grilling.
  • Make sure the grill or grill pan is well-oiled to prevent sticking.

Beer, Wine, Cocktail Pairings

  • Beer Pairing: A crisp, citrusy IPA would complement the flavors of the dish.
  • Wine Pairing: A light-bodied Chardonnay with citrus notes would pair beautifully with the citrus honey glaze.
  • Cocktail Pairing: A refreshing Citrus Moscow Mule made with vodka, ginger beer, and a splash of fresh citrus juice would be a delightful match.
