Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon Caribbean curry powder
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 scotch bonnet pepper, seeded and minced (optional for heat)
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon brown sugar
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste
  • Cooked white rice

Instructions

  1. 1. In a large pan over medium heat, add the coconut milk and Caribbean curry powder. Stir together and bring to a simmer.
  2. 2. Add the onions, garlic, and ginger. Cook until the onions are softened, about 4-5 minutes.
  3. 3. Stir in the bell pepper and scotch bonnet pepper if using. Cook for an additional 3-4 minutes.
  4. 4. Add the shrimp to the pan and cook until they turn pink and opaque, about 3-4 minutes.
  5. 5. Stir in the brown sugar and lime juice. Season with salt and pepper to taste. Simmer for another 2-3 minutes.
  6. 6. Sprinkle chopped cilantro over the shrimp and sauce.
  7. 7. Serve the Caribbean Curry-Coconut Shrimp over cooked white rice.
