Ingredients

  • 1 lb black beans, dried
  • 1 lb pork shoulder, cut into cubes
  • 1 lb bacon, chopped
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tbsp cumin
  • Salt and pepper to taste

Instructions

  1. 1. Rinse the black beans and place them in a large pot with enough water to cover by a few inches. Bring to a boil, then reduce the heat to low and simmer partially-covered for 1-2 hours, or until the beans are tender.
  2. 2. In a separate large pot, cook the bacon over medium heat until it turns golden brown and releases its fat. Add the pork shoulder and smoked sausage, and cook until the meats are browned.
  3. 3. Add the chopped onion and minced garlic to the pot and cook until softened. Stir in the cumin, bay leaves, salt, and pepper.
  4. 4. Transfer the cooked black beans to the pot with the meats and onions. Simmer the feijoada for another 30-40 minutes, allowing the flavors to meld and the stew to thicken.
  5. 5. Serve the feijoada hot alongside white rice, collard greens, and orange slices.

  • Feijoada can be made a day in advance as the flavors develop and improve with time.
