This Boerewors Fusion Feast takes the classic South African dish and gives it a modern, creative twist. The blend of spices, hearty pap, and flavorful chakalaka is a celebration of vibrant flavors and textures.

Ingredients

  • 1 pound boerewors sausage
  • 2 cups maize meal
  • 4 cups water
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 2 garlic cloves, minced
  • 1 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil
  • Fresh cilantro, for garnish

Instructions

  1. 1. In a large pan, heat a drizzle of oil over medium heat. Add the boerewors sausage and cook until browned and cooked through, about 12-15 minutes. Remove from pan and set aside.
  2. 2. In a saucepan, bring the water to a boil. Gradually add the maize meal while stirring to prevent lumps. Reduce the heat to low and simmer, stirring occasionally, for about 20 minutes until the pap is thick and cooked through.
  3. 3. In the same pan used for the boerewors, add a little more oil if needed and cook the onions and red bell pepper until they start to soften, about 5 minutes. Add the garlic, curry powder, cumin, and paprika. Cook for another 2 minutes.
  4. 4. Stir in the diced tomatoes and season with salt and pepper. Simmer for about 10 minutes until the flavors meld together and the mixture thickens slightly to create the chakalaka.
  5. 5. Serve the boerewors on a bed of pap, topped with the flavorful chakalaka. Garnish with fresh cilantro.

Cooking Notes

  • For extra heat, add chopped chili to the chakalaka.
  • If you can't find boerewors, any high-quality sausage with a blend of spices will work well.
